30th gastronomic event dedicated to the use of medicinal plants in the kitchen with competitions, dinners with multi-starred chefs and masterclasses.

The Green Plate is a gastronomic event dedicated to aromatic herbs and their creative use in the kitchen.
It includes a competition dedicated to hotel institutes from Italy and Europe, dinners with starred chefs, masterclasses for the valorisation of aromatic herbs and regional food and wine specialties.

Aromatic herbs, which have always characterized local cuisine, are the modern and at the same time traditional element of a cuisine attentive to trends and new sensitivities. The Herb Garden of Casola Valsenio, a botanical garden where almost 500 varieties of medicinal plants are grown, a few km from Riolo Terme, is the heart of this tradition.

The theme chosen for the 2025 edition is:
“The herbs of longevity”: Herbs, roots, berries, seeds and flowers of longevity

Tuesday 25 March, at 8.00 pm
The First: starred dinner with chef Enrico Mazzaroni

Chef Enrico Mazzaroni of the Il Tiglio restaurant in Montemonaco (AP), awarded a Michelin star and a green star for sustainability, interprets the herbs of longevity with an original menu accompanied by the wines of the Tre Monti winery. If the Michelin star represents one of the most coveted recognitions in catering, the green star, introduced in 2020, distinguishes restaurants at the forefront of sustainability, which give priority to the processing of local products and seasonality, limiting waste and adopting "laudable environmental practices". Enrico Mazzaroni, from his restaurant in the Sibillini Mountains, will delight us with his cooking philosophy.

We often hear about fermented foods, and fermentation is attracting more and more interest. A practice that was used for conservation lost with the advent of refrigerators and sterilization, but which allows foods, if done correctly, to undergo a series of transformations involving good microorganisms that enhance their flavors, nutritional properties and health effects. Sara Marani, teacher at the Riolo Terme Hotel Institute and specialized in these fascinating procedures, will show and tell us everything we need to prepare fermented foods at home, which are so precious for our well-being.

The herbs of longevity: guided tour of the Herb Garden and workshop dedicated to herbal teas, with tasting

There are many plants that we use in the kitchen and for our health, but many are little known or not used correctly. With an expert guide we learn to recognize longevity herbs, truly special plants that can promote our well-being. At the end of the guided tour we will be taught how to correctly prepare a herbal tea and we will be able to taste the prepared herbal teas.

Walk and taste: a guided walking tour of the Enzo and Dino Ferrari racetrack with a final aperitif/tasting based on products with longevity herbs.

The visit to the Enzo and Dino Ferrari racetrack in Imola truly fascinates everyone, even those who don't have a passion for Formula One. If the visit is accompanied by a guide who tells you anecdotes, makes you stop to poke holes in the most famous spots or on the podium, it is even more exciting. At the end of the walk, in this racetrack which boasts 75 years of activity, an aperitif prepared in collaboration with the Riolo Terme Hotel Institute will surprise you with its combinations with longevity herbs.
